A laboratory analysis of our oil performed January 14, 2008 by the Government of Italy demonstrates that it is of extremely high quality. It easily surpasses all criteria to legally be called ‘Extra Virgin’ Olive Oil.
Altogether the results show our olive oil is of an unmatched quality. Below are summarized the key findings of the analysis. A copy of the analysis report is available further below (in Italian only).
Oleic Acid content
In order to legally qualify as ‘extra virgin’, an olive oil must have an oleic acid content of less than 0.80%. Our oil was measured to have a very low oleic acid content of 0.21%.
Peroxide content
Peroxide content must legally be less than 20. Our oil was measured to have a peroxide content of 6.26.
K232 measurement
K232 measurement of the oil must be less than 2.50. Our oil was measured to have a K232 measurement of 1.97.
K270 measurement
K270 measurement must be less than 0.20. Our oil was measured to have a K270 measurement of 0.14.
delta K measurement
The delta K measurement of the oil must be less than 0.01. Our oil was measured to have a delta K measurement of 0.0035.
